WHAT?
1 carrot, a few leaves of celery
1 onion, 2-3 cloves of garlic
1 potato
½ tomato
A little bit of chilli (if you like)
1-2 tablespoons extra virgin olive oil
Little bit of vinegar
1 litre hot vegetable stock
1 tablespoon of tahini diluted in half lemon juice
Salt, pepper
Dill, parsley for serving
HOW?
1️⃣ Finely chop the vegetables, pepper and sauté in olive oil (average heat), let cook for 3-4 minutes.
2️⃣ Add vinegar and let it give the aromas for 2 minutes.
3️⃣ Add stock, reduce heat and let it cook for 10-15 minutes to soften the vegetables. Then mash.
4️⃣ Add orzo pasta and cook for 10 minutes.
5️⃣ Add tahini diluted in lemon juice and stir well.
6️⃣ Finally, serve with some yoghurt, pepper and salt to taste. Some paprika wouldn’t hurt.
