Alternative Greek noodle soup with tahini

WHAT?

100g. chopped chicken thigh fillet

50g cooked sweet corn

100g. Rice noodles

1 carrot chopped

A bit of fennel chopped

Chilli

½ red pepper chopped

½ chopped onion, 1-2 chopped garlic cloves

1.5litres boiling water

Parsley chopped

1 teaspoon tahini in ½ lemon juice

1-2 tablespoons extra virgin olive oil

Oregano, pepper, thyme, salt


HOW TO?

1️⃣Sauté for 3 minutes carrot, fennel, red pepper, chilli, onion and garlic in olive oil. Add the ground pepper.

2️⃣Add chicken, sweet corn and boiling water.

3️⃣Boil for ten minutes. Add the noodles and cook for 2 more minutes.

4️⃣Dilute tahini in lemon juice. Serve with herbs and pepper.
