WHAT?
½ celeriac
2 potatoes, ½ onion, 2 cloves garlic
Fennel seeds
1 teaspoon of EVOO @ladi_biosas
1 ½ litres of vegetable stock
1 teaspoon tahini diluted in 1-2 teaspoons of lemon juice
Pepper, salt, oregano, cumin
HOW TO?
1️⃣Chop the celeriac and the potatoes. Add them in a saucepan. Sauté in low heat in the olive oil for 3 minutes.
2️⃣Add the garlic, the onion, ground pepper and fennel seeds and sauté for another 2-3 minutes in low heat.
3️⃣Add the stock and cook in medium heat for 30 minutes.
4️⃣Add the tahini diluted in lemon juice and mash. Serve with parsley, some cumin (it will make a huge difference) and extra drops of EVOO.
