Arantista lentils

WHAT?

150g. Dried Green lentils 1 grated carrot, 1 grated potato 2 garlic cloves chopped ½ onion chopped 1 little chilli 1 teaspoon tomato paste (peltes) 2 tablespoons red wine vinegar 2 bay leaves 1.5 litres vegetable stock 1 teaspoon salt 2 tablespoons extra virgin olive oil Pepper, oregano

Mint to serve

For the arantista pasta

80g. Plain flour

30ml. Water

Salt HOW TO?

1️⃣In a bowl, mix the flour and water well. Then create tiny little random shapes of fake pasta. Let them dry. 2️⃣In 3 cups water, give the lentils a quick boil for 5 minutes. Get rid of the water. 3️⃣In a saucepan add the olive oil, the onions, the garlic and some ground pepper and sauté for 3 minutes. Add the carrot, the potato and chilli and carry on for one more minute. 4️⃣Add the tomato paste and cook for two minutes. Splash the vinegar and add the lentils, bay leaves and the vegetable stock and leave it cooking in low heat for 20 minutes. Remove the bays. 5️⃣Add the fake pasta in and cook for 3-4 minutes. Serve with pepper, mint and extra vinegar.
