Beautiful aubergines in tomato sauce and feta

WHAT?

2 aubergines

1 onion, 4-5 garlic cloves, chilli

2 large chopped tomatoes

1 teaspoon peltes (tomato paste)

Sugar

100g. Crumbled feta cheese

Pepper, salt, oregano

2 tablespoons olive oil, 4 tablespoons red wine vinegar

Parsley to serve


HOW TO?

1️⃣Cook the aubergines in boiling water for half hour.

2️⃣Sauté in olive oil the chopped onion, chilli and garlic in olive oil for two minutes. Grate pepper and add tomato paste to release its flavours.

3️⃣Splash the vinegar.

4️⃣Add the chopped tomatoes, sugar and cook for twenty minutes.

5️⃣Add the aubergines in a greased tray, put the sauce and feta and cook in preheated 200 degrees oven for 25 minutes. Serve with parsley and extra vinegar.
