Bacalao stifado

WHAT?

4 bacalao pieces

2 sweet potatoes

6 shallots, 2 garlic cloves, chilli

parsley, chervil

2 big tomatoes

pinch of sugar

salt, pepper, oregano

1 tablespoon olive oil

1 lemon juice


HOW TO?

1️⃣In a pan sauté in olive oil the whole shallots and the garlic cloves, chilli for two minutes. Add the chopped tomatoes and sauté for a few more minutes. Add the sugar.

2️⃣Cut the sweet potatoes in chunks and cook in boiling water for fifteen minutes, until soft.

3️⃣Empty the potatoes in a tray, add the tomato mix, 1 lemon juice, the bacalao pieces, salt, pepper and oregano. Chopped parsley, chervil and 50ml. Water. Cook in preheated oven at 180 degrees for 35 minutes. Serve with feta cheese.
