Cuttlefish stifado

WHAT?

2 cuttlefish (about 600g.)

2 tomatoes, 6-8 shallot onions, 2-3 garlic cloves, chilli

½ glass white wine

peppercorns

ground pepper

grated all spice

2-3 bay leaves

1-2 tablespoons olive oil

dried oregano, feta to serve, fennel


HOW TO?

1️⃣Clean the cuttlefish and marinate in bay leaves, peppercorns, garlic for two to three hours. In a saucepan with olive oil, sauté the cuttlefish with the marinade and the shallot onions, the ground pepper and the all spice for two to three minutes. Splash the wine and let the alcohol evaporate for 2-3 minutes. 2️⃣Mash the tomatoes and add to the mix. Cook for 35-40 minutes at low heat.

3️⃣Serve with feta and fennel.
