Beef cheeks in rosemary and Mavrodafni sauce

WHAT?

400g. Beef cheeks

1-2 teaspoons of tomato paste

1 onion, 2-3 cloves garlic, chilli

1-2 tablespoons olive oil

3-4 allspice, 3 bay leaves

1 celery stick

2 carrots

1 tablespoon tomato paste

1 rosemary twig

½ cup of Mavrodafni sweet wine

1.5l. Vegetable stock

Salt, pepper


HOW TO?

1️⃣In olive oil in medium heat sauté the cheeks with the celery carrots, onion, chilli and garlic for 3 minutes, until meat is brown both sides.

2️⃣Add the tomato paste and cook for 1-2 minutes. Splash the wine to let the alcohol steam away (2 minutes).

3️⃣Add the vegetable stock and the all spice, rosemary, bays, salt and pepper.

4️⃣Slow cook for three hours with semi covered lid. The sauce needs to be thick. Serve with feta cheese.
