WHAT?
350g. Beef sheen or ossobuco
1 tablespoon tomato paste (peltes)
1 tablespoon olive oil
1 onion chopped
Chilli
Chopped 2-3 garlic cloves
Pepper, salt
1 lemon juice
A few lavender sprinkles
1 tablespoon balsamic
1 glass of sweet Mavrodafni wine
1 tablespoon honey
Parsley
Salt, pepper
HOW TO?
1️⃣In pan with 1 tablespoon olive oil sauté the onion, garlic, pepper and chilli for two minutes. Add the tomato paste and let it flavour for 1-2 minutes.
2️⃣Add the meat and cook for 2 minutes each side in low heat. Add the wine and let the alcohol evaporate for 2 minutes.
3️⃣Add the lemon juice and a glass of water and slow cook in low heat for 3-4 hours. Check the levels of water. It leaves some gelatine sauce, as the meat has collagen, which thickens the sauce.
4️⃣For the last two minutes add the lavender and pepper. Take off the heat. Add honey and mix well. Serve with balsamic and parsley on the top.
