Cauliflower and black eyed beans soup

WHAT?

150g cooked cauliflower

100g black eyed beans

1 small potato cooked

1 onion, a few cloves of garlic, 1 carrot chilli

1 ½litres of vegetable stock

1 teaspoon tahini, 1 lemon juice

Salt and pepper

Two tablespoons of extra virgin olive oil @ladi_biosas

Parsley for serving


HOW?

1️⃣Sauté onion, garlic and pepper in olive oil for 2-3 minutes.

2️⃣Add the stock, the beans and the rest of the vegetables. Cook for 15 minutes.

3️⃣Mash and dilute tahini in lemon juice. Add in the soup.

4️⃣Serve with parsley and a spoon of Greek yoghurt.
