Delicious chicken ‘avgolemono’ soup

WHAT?
200g chicken thighs
50g. Rice
1 carrot, a few leaves of celery
1 onion, 2-3 cloves of garlic
½ tomato
A little bit of chilli (if you like)
1-2 tablespoons extra virgin olive oil
1 litre hot water
1 egg
1 lemon
Salt, pepper
Dill, parsley for serving
HOW?
1️⃣Finely chop the vegetables, pepper and sauté in olive oil (average heat), let cook for 3-4 minutes.
2️⃣Add chicken with the bones, rice or orzo and hot water and let cook for 15-20 min. Debone the chicken and cut in pieces.
3️⃣Beat the egg white to a meringue, add lemon and the yolk.
4️⃣Add a little bit of the hot soup in the egg slowly slowly.
5️⃣Gradually mix the egg to to the soup.
6️⃣Mix and serve with some yoghurt, pepper and salt to taste.
