Delicious meat with spices and corn flour purée

WHAT? 350g. Beef sheen (χτένι) in chunks

2 tablespoons olive oil

1 onion, 3-4 cloves garlic - all chopped

Chilli

1 tablespoon tomato paste (peltes)

100ml. White wine

2-3 chopped tomatoes

3 bay leaves, all spice, cinnamon

Salt, pepper

2 litres water

For the purée

150ml boiling water

150-200g corn flour

2-3 cloves of garlic

Salt, pepper, extra virgin olive oil

A little bit of thyme


HOW TO?

1️⃣Brown the meat for 2-3 minutes in medium heat in olive oil. Add the ground pepper, chilli, onion and garlic and sauté for 2-3 minutes.

2️⃣Add tomato paste and cook for one minute. Add the wine and let the alcohol steam away. Add the chopped tomatoes.

3️⃣Add spices and water and cook for at least 2-3 hours. Serve with parsley and feta.

4️⃣For the purée: boil the water first, then add the corn flour all in one go and mix very well. Cook for 2-3 minutes. Add chopped garlic, salt, pepper and olive oil.
