Light and easy rice noodles stir fry

WHAT?

150g various chopped stir fry vegetables (carrots, cauliflower, beansprouts, peppers)

100g rice noodles

1 onion, 3 cloves garlic, little bit of chilli

5 small tomatoes cut in half

1 teaspoon of extra virgin olive oil @ladi_biosas

Pepper, salt oregano

1 tablespoon of balsamic


HOW?

1️⃣Start with sautéing the onion, garlic, chilli for a few minutes. Add the tomatoes, the pepper and the oregano and mix. Add the vegetables and sauté in higher heat for 10 minutes.

2️⃣Add the rice noodles. Mix and cook for 3 minutes.

3️⃣Add the balsamic and mix well. Add parsley and let it wilt. Serve with more pepper.
