Meat and aubergines to die for

WHAT?

350g. Beef sheen (hteni)

1 onion, a few garlic cloves, chilli

1 aubergine

2 sweet potatoes

1 teaspoon tomato paste (peltes)

All spice, pinch of sugar

Shot of white wine

2-3 bay leaves

2-3 tablespoons olive oil

Salt, pepper, oregano

Parsley and feta to serve


HOW TO?

1️⃣Sauté the onion, garlic, chilli in olive oil at medium heat.

2️⃣Add the meat and cook for 3-4 minutes. Add the tomato paste and pepper to bring their aromas.

3️⃣Splash the wine and let the alcohol evaporate.

4️⃣Add approximately 2l. water, the bay leaves and the all spice and let it cook for 3.5 hours.

5️⃣Check the water levels. Add the potatoes and the aubergine and cook for another hour.

6️⃣Serve with feta cheese, parsley, oregano and freshly ground pepper. It may need salt. Try before adding.
