WHAT?
350g. Mince (mix beef, pork and lamb)
½ onion, 2-3 garlic cloves, chilli - all chopped
2 tablespoons red wine vinegar
Bunch of parsley
1 tablespoon olive oil
40g. Corn flakes
70g. @gravieranaxou cheese (or aged cheddar) cut in sticks
Pepper, oregano
1 crushed allspice
For the sauce
2 tablespoons tomato paste
Bunch of parsley
Dry mint
100ml. Water
1 tablespoon red wine vinegar
Salt, pepper, oregano
Tomatoes, parsley, corn flakes to serve
HOW TO?
1️⃣Finely chop onion, garlic, chilli and parsley. In a bowl mix well with the mince. Add the vinegar, pepper, oregano, allspice and the corn flakes. Mix well.
2️⃣In greaseproof paper make the mince flat in a rectangular to help create the roll. In the middle add the cheese and with the help of the grease proof paper, fold all edges to create a meat loaf. Put it in the fridge to marinate for 1-2 hours.
3️⃣Cook with the grease proof wrapped around it for 50 minutes at 180 degrees oven. In the meantime make the sauce. In a pan, cook the tomato paste for a minute. Splash the vinegar for 1 minute. Add the rest of the ingredients. The sauce will be on the thick side.
4️⃣Spread on top of the meat loaf and cook for 10 minutes without cover at 200 degrees. Serve with some more parsley on top, corn flakes and fresh tomatoes.
