Aubergines tis giagias

WHAT? 2 aubergines tsakonikes (tiger)

2 litres water

Splash of olive oil

Flour

For the topping

2 tomatoes chopped

1 chopped cucumber

1 chopped onion

Garlic

Parsley

ChilliSalt, pepper

3 tablespoons vinegar

1 tablespoon olive oil

Cream cheese


HOW TO?

1️⃣Cook the whole aubergines in boiling water for 20 minutes.

2️⃣Off the heat and let them cool. Dip them in flour and fry in olive oil for five minutes each side. When taking of the heat remove the excess olive oil by placing them in kitchen towel.

3️⃣In each aubergine make an opening and add a little bit of vinegar and chopped garlic (vinegar, garlic and aubergines are good friends). Make the salad and add at top. Add seasoning and serve.
