WHAT? For the pastry 150g. Plain flour 60-70ml. Water 1 teaspoon red wine vinegar Pinch of salt For the meatloaf
2 hard-boiled eggs 300g. Mince (mix of lamb, beef and pork) 2 teaspoons red wine vinegar 1 onion, 3 garlic cloves - all chopped 1 tablespoon yoghurt Parsley, salt, pepper, oregano 2 small tomatoes All spice (pinch) 50g. Feta cheese Chilli Sesame seeds to serve
For the sauce
2 big tomatoes
Teaspoon tomato paste
1 tablespoon sugar
All spice
Salt, pepper
Basil
HOW TO?
1️⃣Mix the pastry ingredients. Leave to rest for at least half hour.
2️⃣Mix the mince with herbs, spices, yoghurt and chopped vegetables. Leave to rest for 1 hour covered in the fridge.
3️⃣Flatten the mince and put the eggs in the middle. Roll it. Roll the pastry and wrap around to make it like a Wellington. Put some olive oil and seeds.
4️⃣Put foil over it and cook covered for 40 minutes at 190 degrees and uncovered for extra 10. 5️⃣Chop the tomatoes and bring to boil with sugar and tomato paste. Reduce the water and add basil, nutmeg, pepper, salt. Pour it over the meatloaf.
