My lentil soup

WHAT?

150g. Dried Green lentils

1 grated potato

1 grated carrot

2 garlic cloves chopped

½ onion chopped

1 little chilli

1 teaspoon tomato paste (peltes)

2 tablespoons red wine vinegar

2 bay leaves

1 twig rosemary

1.5 litres vegetable stock

1 teaspoon salt

2 tablespoons extra virgin olive oil

Pepper, oregano

HOW TO?

1️⃣In 3 cups water, give the lentils a quick boil for 5 minutes. Get rid of the water.

2️⃣In a saucepan add the olive oil, the onions, the garlic and some ground pepper and sauté for 3 minutes. Add the potato, carrot and chilli and carry on for one more minute.

3️⃣Add the lentils, tomato paste, bay leaves and the vegetable stock and leave it cooking in low heat for 15 minutes. Remove the bays.

4️⃣Always serve with pepper, oregano and red wine vinegar.

5️⃣Add a few more drops of olive oil.
