WHAT?

300g. Pork fillet

1 slice of bread in water

1 onion finely sliced

4 garlic cloves, a little chilli

1 tablespoon of red wine vinegar

A shot of ouzo

Dried oregano

Fresh and dried mint

Fresh basil

Pepper, salt

Parsley

Flour, olive oil to fry


HOW TO?

1️⃣Cut the pork in long strips. Holding two sharp knives closely together, start doing sharp and quick movements. Our goal is to creat tiny pieces of pork - almost like homemade mince. 2️⃣In a bowl add the mince and bread. Add the onion, garlic, chilli and vinegar.

3️⃣Add the herbs and mix well. Ouzo in and spices. Mix very well. Marinate for at least half hour.

4️⃣Make small balls, dust on flour and fry in for 3-4 minutes each side in olive oil.
