WHAT?
100g various chopped stir fry vegetables (carrots, cauliflower, beansprouts, peppers)
80g rice noodles
1 onion, 3 cloves garlic, little bit of chilli
Bit of chopped ginger
Coriander
1 ½litres of vegetable boiling stock
100g chopped chicken
1 teaspoon of extra virgin olive oil @ladi_biosas
Pepper, dry coriander, salt oregano
1 tablespoon of balsamic
½ lime zest and juice
Serve with Greek yoghurt
HOW?
1️⃣In a deep pan sauté dry coriander, pepper, onion, garlic, chilli and ginger in extra virgin olive oil.
2️⃣Add the stir fry vegetables. Add stock and chicken to cook for 20 minutes. Add the noodles 2 minutes before it’s ready.
3️⃣Add the fresh coriander.
4️⃣Add salt and extra pepper to taste. Add balsamic vinegar and the lime juice and zest. Serve with Greek yoghurt.
