150g. Thick tube pasta (I use pastitsio thick pasta)
Splash of white wine
1 chopped onion, 3 sliced garlic cloves
Little chilli
6 cherry tomatoes
100g. Apaki cured meat (or any pancetta )
100g. Goat’s cheese
Parsley to serve
Freshly ground pepper, EVOO @ladi_biosas
HOW TO?
1️⃣Cook pasta in saucepan for 2-3 minutes before ready.
2️⃣In a frying pan brown the apaki for one minute at medium heat.
3️⃣Add the onion, garlic, ground pepper and chilli for two minutes. 4️⃣Add the tomatoes and caramelise them. Add the splash of wine.
5️⃣Add the pasta and three spoons of the water to help the sauce thicken. 1 minute before ready slice goat’s cheese on top and serve with parsley and extra virgin olive oil @ladi_biosas.
