WHAT?
300g runner beans (cut the ends and remove the strings from the sides)
½ onion, 2-3 garlic cloves
2 sweet potatoes in smaller pieces
A few fennel seeds
1 carrot
1 teaspoon tomato paste (peltes)
Little chilli,
2 tablespoons olive oil
4 tomatoes blended
Pinch of sugar
Pepper, salt, oregano
Finely chopped parsley, fresh mint, spring onion for serving
HOW TO?
1️⃣In a large pan, sauté in the olive oil onion, garlic, tomato paste, chilli and dried herbs. Let them release all their flavours for 2-3 minutes.
2️⃣Add the beans, the carrot and the sweet potatoes. Let them sauté for an extra minute. Add the tomatoes and a pinch of sugar. Cook for 30-35 minutes with a cover on.
3️⃣Add chopped parsley and mint and the spring onion. Let them sweat for 1 minute, after you’ve switched off the heat. The sauce will be quite thick. Serve with feta and enjoy.
