Stuffed lamb shoulder with sweet potatoes

WHAT?

Lamb

400g. lamb shoulder - bones removed (to be flat

150g. feta cheese

3-4 sun-dried tomatoes

6-7 olives

4 cloves of garlic cloves

Oregano, pepper

Little chilli

Little bit French mustard/ 1 lemon


Potatoes

4 sweet potatoes

2 lemons

250ml water

2 teaspoons French mustard

Oregano, pepper


HOW TO?

1️⃣In a large piece of grease proof paper, flat the lamb, score little holes and insert the garlic pieces. This will give a delightful taste and beautiful smell.

2️⃣Add the feta cheese in the middle, olives, chilli and sun-dried tomatoes.

3️⃣Grind some pepper and oregano and roll it with the help of the grease proof paper. Add mustard, pepper and lemon on the outside and close with the grease proof paper to a little parcel.

4️⃣Grease tray and cut the sweet potatoes and add them in.

5️⃣Add two lemons, 1 tablespoon of olive oil, oregano, mustard and some water. Add the lamb parcel in.

6️⃣Cook in preheated oven at 170 degrees for 2.5 hours covered in foil and remove the foil and the grease proof and cook for another hour.
