WHAT?
2 aubergines
1 red pepper
1 chopped tomato
1 chopped onion
5 garlic cloves
2 tablespoons olive oil
½ lemon juice
2 tablespoons vinegar
Parsley, coriander
Pinch of salt, pepper
HOW TO?
1️⃣Cook the aubergines in boiling water with salt until soft. Grill the red pepper in the oven in greased tray for 7 minutes each side. Take it off the oven and remove the skin. Should have browned and created bubbles on the surface - easy to remove. 2️⃣Roughly mash the aubergines and chop the red pepper in.
3️⃣Add onion, chop garlic and tomato. Add vinegar, olive oil and lemon juice.
4️⃣Chop the herbs and add them in. Lightly mix to create a rough mash.
