WHAT?
3 courgettes
Pinch of salt1 onion roughly chopped, 3-4 garlic cloves chopped
1 grated carrot
Little chilli
Chopped fennel and mint (bunch)
1 egg
3 tablespoons corn flour For the topping
3 tomatoes sliced
1 onion, 3 sliced garlic cloves
Capers
Olives
Basil
3-4 tablespoons of extra virgin olive olive
Salt, pepper, oregano
HOW TO?
1️⃣Grate the courgettes, onion, carrot and garlic. Add chilli to the mix. 2️⃣Sieve the courgettes, onion, carrot, garlic, chilli mix and salt. Let it for 15 minutes to remove excess water. Press firmly.
3️⃣In a bowl mix well the courgette mix with the flour, egg, fennel and mint. Place in grease proof paper in a pizza dish to create a pizza base and cook at 180 degrees for 25 minutes.
4️⃣Remove from oven and add the sliced tomatoes, onion, garlic, capers and olives to the top. Add pepper, olive oil and cook for another 10-15 minutes. Garnish with basil and serve.
