WHAT? 1 jar of cooked artichoke hearts (about 250g.) 1 small carrot 1 small potato Little bit of fennel 2 tablespoons of rice 2 cloves garlic, little chilli ½ onion 1-2 teaspoons of EVOO @ladi_biosas ½ lemon juice 1 ½ litres of vegetable stock Salt, pepper HOW TO? 1️⃣Chop and sauté the vegetables (keep two artichoke hearts for the top) and the rice in olive oil. Add the pepper and sauté for 1-2 minutes.
2️⃣Add the stock and cook for 20 minutes. 3️⃣Mash the soup. Add lemon and garnish with the chopped artichoke hearts.
