Artichoke salad

WHAT?

Bunch of rocket

7 artichokes

1 chopped carrot

2 garlic cloves

1 spring onion

150g. Green peas

Little bit of chilli

Bunch of dill, chopped

2 tablespoons honey

1 tablespoon mustard

Teaspoon of olive oil, ½ lemon juice

salt, pepper, thyme

Capers and a tablespoon of fresh cheese


HOW TO?

1️⃣Clean the artichokes and remove all the hard leaves outside. You will be left with tender leaves and the heart. Place in water with lemon, as you’re cleaning them. 2️⃣Add salt, pepper, 1 tablespoon honey and oregano. Cook in the oven at 200 degrees for twenty minutes. At the same time cook the green peas in boiling water for 8 minutes.

3️⃣In a bowl, add the cooked peas and chopped artichokes. Chop the carrot, garlic, chilli, dill and add to the bowl. Mix in the rocket. Add olive oil, lemon juice, honey, salt and pepper and serve. Garnish with some fresh cheese and capers.
