WHAT?
60g. Mix of lentil and fava beans
2 bay leaves
1 small gem lettuce
Bunch of rocket
Fresh garlic, mint, fennel
1 grated carrot
4 cherry tomatoes
1 spring onion
Parsley
mizithra cheese to serve
For the sauce
1-2 tablespoons olive oil
salt, pepper
1 teaspoon vinegar
1 teaspoon of French mustard
fennel seeds
chopped fennel, chilli
HOW TO?
1️⃣Cook the pulses in boiling water for 10 minutes with the bays. 2️⃣Chop the lettuce and mix with the rocket in a bowl. In low heat add the olive oil and chopped chilli, plus pepper and fennel seeds and let it cook for two minutes. In the bowl, chop and add garlic, onion, fennel, parsley, tomatoes and grated carrots. Mix.
3️⃣In the olive oil, add vinegar and mix in fennel and mustard. pour over the salad
