WHAT?
7 artichokes
tablespoon of honey
2 tablespoons of olive oil
1/2 lemon
3-4 garlic cloves, chilli
1 spring onion
dill, fennel
300g. Greek yoghurt
150g. Mizithra (soft unsalted white) cheese
2-3 tablespoons self raising flour
1 carrot, a few cherry tomatoes
4 filo sheets
pepper, salt, nutmeg

HOW TO?
1️⃣Clean the artichokes, remove the leaves (keep a few tender near the heart) and chop them to thin slices. Put them in a bowl with water and lemon.
2️⃣In pan at medium heat sauté the artichokes for 6-7 minutes each side. Add thyme, the carrot in slices, chopped onion, garlic and chilli. Sauté for 2-3 minutes. Add the honey and caramelise.
3️⃣Mix in bowl the artichoke mix, the cheese crumbles, the Greek yoghurt, lemon juice. Chop the spring onion, dill and fennel and add to the mix. Add the flour and whisk. Pepper, salt and nutmeg.
4️⃣In a greased tin, lay the first filo. Brush olive oil. Lay the second and do the same. The third and do the same and the fourth. Pour in the mix. slice in half cherry tomatoes and push them at the top of the pie. Cool at 180 degrees for 45 minutes until brown. Let cool before serving.
