WHAT?
Puff pastry - 2 sheets (σφολιάτα)
750g. Chicken breast fillet
2 onions
A bit of celery
1 red pepper, 2 carrots
50ml. Olive oil
2 tablespoons corn flour
3 eggs
Grated kefalotyri cheese (a strong cheddar should do)
Pepper
HOW TO?
1️⃣In chopper, chop the onion, pepper, carrots and celery. 2️⃣Pour olive oil in a pot. Add the chicken with the chopped vegetables and water to cover it. Cook for 1.5 hours in low heat, until soft. 3️⃣Remove the chicken and vegetables; leave just the juice. It should be approximately ½ glass. Let cool and dilute the corn flour in. 4️⃣Put in low heat in the pan, until a cream is formed. Off the heat. Add all vegetables, the chicken in cubes, carefully the three eggs (so they don’t cook) and grated cheese and mix. 5️⃣Stuffing is ready. Grease a tray and add the bottom sheet with the edges hanging off the tray. Add stuffing and the second sheet. Fold the edges, score into pieces and cook at preheated 180 degree oven for 50 minutes until brown.
