Aubergine and feta patties

WHAT?

1 aubergine

10 chestnuts

½ chopped onion, 2-3 chopped garlic cloves

Chilli

Parsley 100g. Feta

1 egg Little bit of trahana (or 1-2 tablespoons corn flour)

Salt

Sesame seeds for the topping

2-3 tablespoons corn flour

Olive oil for frying


HOW TO?

1️⃣Cook the aubergine and the chestnuts. Boil them for 30 minutes or cook with foil for 1 hour and a half at 200 degrees preheated oven.

2️⃣In a pan sauté the onion, garlic and chilli with olive oil for 2-3 minutes. Let it cool.

3️⃣In a bowl mix the cooked aubergine, cooked chestnuts, feta, trahana, the onion, garlic, chilli and parsley. Grind pepper and add the egg. Mix well.

4️⃣On a plate add corn flour and sesame seeds. Make the mixture to little patties, roll them to corn flour and sesame seeds and fry for 3-4 minutes each side in olive oil.
