Aubergine frittas

WHAT?

1 aubergine, cut into long and thin strips

2-3 cloves of garlic, little chilli - thinly chopped

Pepper, paprika, salt, oregano

2 tablespoons of self raising flour

2 tablespoons of bread crumbs

100ml. Water

1 tablespoon red wine vinegar

Extra virgin olive oil for frying


HOW TO?

1️⃣Cut the aubergine into long and thin strips. Put in a bowl with water.

2️⃣Mix the flour, the paprika, salt, pepper, oregano, bread crumbs. Add the water, vinegar, garlic and chilli and mix well to form a batter with no lumps.

3️⃣Put each of the aubergine strips through the batter a few times. Shake to remove excess.

4️⃣Fry the aubergines in hot olive oil 3-4 minutes each side. When removing from the pan, put in kitchen towel to remove excess oil.
