Aubergine rolls with feta

WHAT?

1 aubergine

80g. Feta cheese cut into little sticks

2 tomatoes chopped

1 onion, 2 garlic cloves, little chilli

1 teaspoon Greek tomato paste (peltes)

Pinch of sugar

Pepper, oregano

Bunch of fresh herbs (oregano, thyme, basil)

2 tablespoons red wine vinegar

1 tablespoon red wine vinegar

3-4 tablespoons extra virgin olive oil

Feta, parsley to serve


HOW TO?

1️⃣Make the sauce. Sauté onion, garlic and chilli in the olive oil for 2-3 minutes. Add the tomato paste and pepper to give all aromas. Splash 1 tablespoon vinegar.

2️⃣Add chopped tomatoes, chopped herbs, pinch of sugar and 50ml. Water and let cook for 5 minutes. Let it cool.

3️⃣Slice the aubergine into thin and long slices. Cook in water to soften for twenty minutes.

4️⃣Remove from water and drain. Stuff each aubergine slice with a stick of feta. Put them all in a greased tray. On top, pour the sauce. Add some more water if needed.

5️⃣Cook in 200 degree pre-heated oven for 25 minutes. Grate some feta add some parsley and serve.
