WHAT?

For the pitas

170g. plain flour

1 heaped tablespoon buck wheat flour

6g. fresh yeast or ¾ teaspoon dried yeast

Pinch of salt, pinch of sugar

100ml. tepid water

HOW TO?

1️⃣Dilute yeast in water. Add pinch of sugar. Let it activate for 5 minutes (it will make a bubbly white powder at top).

2️⃣Mix well flour, salt, the yeast and water and keep kneading - until a soft, nice pastry.

3️⃣Cover in cling film and let it rest for two hours in warm plain. The mix should have doubled in size. Roll it in 4 pita breads. Cook in hot non stick pan without oil for 3-4 minutes each side.
