Best okra ever

WHAT?

350g. Okra

1 onion, 3-4 garlic cloves, 1 tomato

Chilly

1 teaspoon peltes (or 2 tablespoons tomato paste)

2 tablespoons red wine vinegar

2 tablespoons olive oil

2 mashed tomatoes

Parsley

Salt, pepper

2-3 bay leaves

HOW TO?

1️⃣Cut the top of the okra and dip the end in salt. Leave to one side.

2️⃣Sauté the chopped onion and garlic in olive oil for two minutes. Grate pepper and chop chilli.

3️⃣Sauté the okra for three minutes. Add the tomato paste to release its flavours.

4️⃣Add the chopped tomatoes and cook for twenty minutes.

5️⃣After it’s cooked, add parsley, salt and pepper to taste.
