WHAT?
4 medium courgettes
200g. Mince
1 chopped onion, 2 chopped garlic cloves, little bit chilli
Shot of brandy
1 chopped tomato, 2 bay leaves
1 cinnamon stick
Parsley
Pepper, salt
100g. Greek yoghurt
Grated cheese
1-2 tablespoons olive oil
HOW TO?
1️⃣Cut the courgettes sideways in half. With a knife, remove most of its inner.
2️⃣In a pan with olive oil, sauté the onion, garlic and chilli for two minutes. 3️⃣Add the mince and pepper and cook until brown. Splash with brandy and let the alcohol evaporate for two minutes.
4️⃣Add the bay, cinnamon the courgette inners and cook for 15 minutes. Add the parsley. Remove the cinnamon stick and bays. 5️⃣Stuff each courgette half with the mixture. Add the yoghurt as topping and grate some cheese. Cook at preheated 190 degrees oven for 20 minutes covered with foil. Then uncover and cook for another 10 minutes.
