Courgette flowers stuffed with fava beans

WHAT? 4 courgette flowers

60g. Fava beans (yellow split beans)

1 carrot, 1 onion, 1 bay leaf, chilli

1 tablespoon red wine vinegar, 2 tablespoons extra virgin olive oil

Thyme, salt, pepper, chopped garlic

Olive oil, flour for frying HOW TO? 1️⃣Cook the fava beans for twenty minutes with the bay leaf, carrot and onion. 2️⃣Mash the fava beans with the red wine vinegar and add the garlic, chilli, olive oil and salt, thyme and pepper. 3️⃣Wash very carefully the leaves. Take out the stems. They are very sensitive, so be careful. In each flower, add 2 tablespoons of the fava beans. 4️⃣Dip in flour. Cook in hot olive oil for five minutes each side. Remove the excess by placing them in kitchen towel.
