WHAT?
500g. Chicken thighs on the bone
300g. Green beans or runner beans
1 big tomato
1 teaspoon of tomato paste (peltes)
1 onion, 3-4 garlic cloves, chilli
1 sweet potato
Mint and parsley to serve
2-3 teaspoons olive oil
Pepper, salt
HOW TO?
1️⃣Chop and sauté the onion, garlic, chilli in olive oil at medium heat.
2️⃣Add the beans, the chicken, tomatoes and tomato paste. Chop the potato and add. Try and not add water and close the lid. Check the water levels though, and let it cook for 35 minutes. Open the lid and cook for another 10 minutes.
3️⃣The chicken will give the flavour to the dish. Chop parsley and mint. Add to the dish. Salt and pepper.
