Fantastic peppers stuffed with feta and mizithra

WHAT?

4 medium sized red peppers

100g. Mix Feta and Mizithra (softer white) cheese

3 tablespoons Greek yoghurt

Bunch of mixed herbs chopped (mint, tarragon, parsley, dill)

Chilli

½ tomato

2-3 tablespoons extra virgin olive oil

2 stems of Greek saffron

1-2 tablespoons vinegar

Salt, pepper, oregano

Lemon


HOW TO? 1️⃣Cut the pepper top and remove the seeds from each pepper ready for stuffing. 2️⃣In a bowl crumble the feta, mix the yoghurt and fork in the herbs and the saffron.

3️⃣Cut the tomato in chunks and add it in to create a solid mix.

4️⃣Add the olive oil, vinegar, salt, pepper and oregano and mix it well.

5️⃣For each pepper add 3-4 teaspoons of mixture in. Close with the top.

6️⃣Grease a tray and place all peppers in. Pour a lemon juice and ½ glass of water. Cover with foil and cook at preheated oven 180 degrees for 45 minutes.
