Fava purée

WHAT?

150g. Fava beans (yellow split peas)

2 bay leaves

1 carrot

Chilli

1 onion, 2-3 cloves of garlic

30 ml. Olive oil

Splash of red wine vinegar

Pepper, salt, thyme


HOW TO? 

1️⃣Cook the fava beans until soft (25 minutes), in water with a carrot and bay leaves.

2️⃣Mash the beans with garlic, onion, chilli. Add seasoning and vinegar and slowly drip the olive oil, so by frothing it, it becomes very airy and fluffy.
