My perfect beans with aubergines

WHAT?

1 aubergine in chunks

150g. Mixed beans, soaked overnight in boiling water

1 tablespoon of tomato paste

1 chopped onion, 2-3 garlic cloves, chilli

1 small carrot in chunks

2 tomatoes

1litres vegetable stock

A few celery chunks

Salt, pepper

1-2 tablespoons olive oil

3-4 tablespoons red wine vinegar

Parsley, feta to serve HOW TO?

1️⃣In a small pan sauté in olive oil the onion, garlic, aubergine in chunks, chilli and carrot for two minutes. Add celery. And continue for 2-3 minutes.

2️⃣Add tomato paste and carry on. Splash with vinegar. Add the beans, the tomatoes chopped and the stock and let it cook at medium heat, covered for 1 hour.

3️⃣Serve with feta and parsley.
