WHAT?
For the garlic dip
2 medium sweet potatoes cooked, 1 potato
5-6 garlic cloves
½ lemon juice
2 tablespoons red wine vinegar
A few walnuts
Salt, pepper, dill and thyme
40ml. EVOO For the fish
3-4 fillets of white fish (cod, haddock, bass)
7 heaped tablespoons self-raising flour
½ teaspoon of yeast
Pinch of sugar
1 small can of lager beer (250ml)
Salt and pepper, paprika HOW TO? 1️⃣Chop the garlic and add the warm potatoes. 2️⃣Start whipping the potato in. Add all ingredients except olive oil. 3️⃣Pour the olive oil thinly and carry on whipping. 4️⃣That will create a very airy and fluffy dip.
5️⃣For the fish: dry very well all fish fillets in kitchen towels. Make sure they are completely dry. Whisk all batter ingredients well. Leave it aside for couple of hours. Dip the fish in the batter and place on a grease proof paper tray. Cook at 210 degrees, until golden brown (about 30 minutes).
