WHAT?
7 filos
150g. Greek yoghurt
1 chopped onion, 3 cloves garlic
Chilli
200g. Wild mushrooms
½ red pepper
50g. Walnuts
1 tomato
200g. Mixed cheeses (feta, cheddar, soft cheese, @katikidomokou)
2 tablespoons Greek olive oil @ladi_biosas
2 tablespoons red wine vinegar
Pepper, salt if needed, thyme
Parsley
Grated nutmeg
HOW TO?
1️⃣In pan with olive oil, sauté the onion, red pepper, garlic, ground pepper in medium heat for two minutes. 2️⃣Increase to high heat and add the mushrooms. Let them cook without salt (but mix) for 4-5 minutes.
3️⃣Add the walnuts and red wine vinegar to steam away.
4️⃣Add the tomato, cheeses, Greek yoghurt and break one filo in the stuffing. Grate nutmeg and mix. Let the stuffing cool.
5️⃣Switch off heat and add parsley and thyme. In shallow greased tray lay the first filo. Brush olive oil, carry on with half filos. Add the stuffing then next filo, olive oil, etc.
6️⃣Connect the excess filo edges, so the pita is fully closed, score the pita to pieces, brush with olive oil and add sesame seeds. Cook in preheated oven at 175 for 55 minutes.
