My very thin spinach pie

WHAT?

For the pastry

150g. Plain flour

1 teaspoon red wine vinegar

90ml. WaterPinch of salt For the stuffing

500g. Greens (spinach, chervil, nettle, rocket)

150g. Goat’s cheese (or feta)

1 spring onion, 3 chopped garlic cloves, chopped chilli

1 tablespoon olive oil

Salt, pepper

HOW TO?

1️⃣We make the pastry, by adding all the ingredients and mixing well. Pastry needs to be elastic, but not sticking. If so, add flour. Let it rest covered for an hour.

2️⃣In a sieve we add the greens and add salt. Let them remove the excess liquid for ten to fifteen minutes. After that time, press them as well.

3️⃣Chop garlic, chilli and spring onions and add to the greens. Mix in well the goat's cheese.

4️⃣Separate the flour into 4 little balls. Roll four thin filos. Add a spoon of the stuffing in each and fold like an envelope.

5️⃣In a pan, with very little olive oil, at low heat fry each pita for 5 minutes each side. Or until they get a lovely colour.
