WHAT?
150g. Rice noodles
50g. Cooked lentils in water with two bay leaves
1 onion, 3-4 garlic cloves, little chilli
½ red, ½ yellow pepper
2 tablespoons olive oil
Vinegar
1 carrot
3 cherry tomatoes
Parsley, spring onion
Pinch of salt, pepper, oregano, paprika
1 heaped tablespoon Greek yoghurt HOW TO?
1️⃣In olive oil sauté the chopped onion, garlic, chilli and peppers for two minutes.
2️⃣Grate the carrot and chop the tomatoes and the spring onion. Add in the pan.
3️⃣Add the rice noodles and add the vinegar to steam away. Add a little water to cook the noodles and the sweetcorn.
4️⃣Add the cooked lentils and mix well. In two to three minutes the dish should be ready. Take off the heat and add seasoning, parsley and the yoghurt.
