Pearl barley youvetsi

WHAT?

100g. Pearl barley

1 tablespoon extra virgin olive oil

1 onion, 2-3 cloves of garlic, chilli

1 carrot

¼ leek chopped

2 bay leaves

2-3 all spice

1 teaspoon of tomato paste (peltes)

1 glass of hot stock

Shot of red wine vinegar

Salt, pepper, oregano

Grated cheese


HOW TO?

1️⃣In the olive oil, sauté the onion, garlic, chilli, leek and carrot in medium heat for two to three minutes.

2️⃣Add the parsley and the tomato paste and let cook for another 2 minutes. Splash the vinegar and let it steam away.

3️⃣Transfer to a clay dish and add bay leaves all spice, the stock and grated cheese.

4️⃣Cook at 200 degrees for 40 minutes.
