WHAT? 2 pointy sweet red peppers
2 medium sized good quality sausages
1/2 red onion, 2-3 garlic cloves, chilli
One chopped tomato
1 teaspoon tomato paste
2 tablespoons red wine vinegar
½ carrot, chopped
60g. Black eyed beans
Salt, pepper, oregano, parsley
Feta to serve HOW TO?
1️⃣Cook the beans for 10 minutes in water with the chopped carrot.
2️⃣In a pan with no extra olive oil, medium heat add the sausages and cook 2-3 minutes each side. Add the chopped onion and garlic and sweat in medium heat for 2 minutes. Add the cubed carrot, tomato paste and tomato. Add the chilli and vinegar and cook for two more minutes.
3️⃣Turn off the heat and add the parsley and the beans.
4️⃣Score the side of each pepper. Remove the seeds, clean and stuff in each pepper half of the mixture, the whole sausage (if it fits) or two halves.
5️⃣Cook in greased tray at 185 degrees covered with foil for 40 minutes. Uncovered for 10 more minute. Serve with feta crumbs on top.
