WHAT? 150g rice noodles
1 carrot, some sugar snaps
1 onion, 2-3 cloves of garlic
Couple of mushrooms, bean sprouts, couple of slices of ginger
Sweet corn, peas
A little bit of chilli
A little bit of fennel
3 tablespoons extra virgin olive oil @ladi_biosas
½ lime grate and juice
Salt, pepper, fennel seeds
Coriander
A few almonds
Katiki Domokou to serve
HOW?
1️⃣Toast the almonds and the fennel seeds. Slice onion, garlic, chilli, carrot, mushrooms and fennel. Then sauté all vegetables to the pan with herbs and spices in 3 tablespoons of olive oil.
2️⃣Add the remaining rice noodles and cook for 5 minutes, always stirring. Add lime juice.
3️⃣Finish with 1 tablespoon petimezi (molasses)and add the lime zest and the juice and coriander.
4️⃣Add salt, pepper, oregano to taste. And @katikidomokou to serve.
