Stuffed courgette flowers

WHAT?

10 courgette flowers

100g. Feta cheese

Wild garlic

Little chilli

4-5 fresh mint leaves

Freshly ground pepper

Olive oil for frying

Pepper, salt and thyme for serving


For the batter

4 heaped tablespoons corn flour

6 tablespoons water


HOW TO?

1️⃣Make the stuffing. Crumble the feta and mix with chopped mint, chilli and wild garlic. Mix well. 2️⃣Wash the flowers carefully. They are very tender. Remove the stem from the middle.

3️⃣Make the simple batter, by mixing the ingredients.

4️⃣Roll the stuffed courgettes in the batter and fry them in little oil until golden brown. Dry them in kitchen towel, add salt and grind fresh pepper and thyme.
