WHAT? 2 sweet potatoes in chunks 2 small aubergines in chunks 1 courgette cut in chunks 4 big tomatoes 4 garlic cloves 1 onion Chilli Bunch of parsley Bunch of Greek basil Bunch of mint Oregano, pepper, salt 1 lemon juice Feta to serve 30ml. Water 2-3 tablespoons olive oil HOW TO?

1️⃣Mash two tomatoes with the herbs, onion, chilli and garlic. 2️⃣In boiling water add the chunks of the sweet potatoes, the aubergines, the courgette and cook for 15 minutes to soften.

3️⃣In a tray, add the vegetables. Cut the two remaining tomatoes and add to the mix. Pour the chopped tomato purée over the vegetables. Add the water and olive oil, salt, pepper, lemon and oregano.

4️⃣Cover with foil and cook for 45 minutes at 190 degrees. Uncover and cook for an extra 30 minutes. Serve with extra herbs and feta.
